Well, this is more like an idea than a how-to, but it turned out so delicious that I thought it was worth posting.
On Christmas Eve, our family traditionally have cod-fish (my mother-in-law prepares it) but the problem is that I don’t really like cod-fish. So every year I make something different for me to eat – I think I haven’t found something that special yet to make it my own tradition 😉 And, whatever I make, I always make sure I have enough to share 🙂 This Christmas I decided to go vegetarian and made this tart. I would never have imagined it’d be such a hit!
TOMATO AND CREAM CHEESE TART
INGREDIENTS
500g puff pastry
300g cream cheese
400g cherry tomatoes, halved and deseeded
garlic flakes
dried oregano
salt
METHOD
Preheat oven to 190°C.
Line a loose-bottomed tart tin with the pastry. Fold pastry that went up the sides over the bottom to make a brim.
Spread enough cream cheese on the bottom to make a fairly thick layer. Distribute the tomatoes on top and sprinkle with garlic flakes, salt and oregano.
Bake until the pastry is golden.
I love the colours in this delicious tart 😀
