I love fritters.
There, I said it. I love everything fried (except for onions).
But I hate frying
So I decided to make a batch and try to bake them. I have to admit now that I still prefer them fried but when I think of standing next to a hot hob holding a pan full of hot oil for, what?, 15-20 minutes and all the calories that come with it, I’m well contented with this baked version π
BAKED CHEESY COURGETTE FRITTERS
INGREDIENTS
250g grated courgettes
2 eggs, beaten
170g potato flour or plain flour
1/2 tbsp baking powder
100g grated parmesan cheese
salt, pepper and seasoning to taste
METHOD
Preheat oven to 220Β°C. Mix all the ingredients together, make ping pong sized balls and arrange them on a baking tray. Bake for 12 minutes or until golden brown.
Yields about 20.
I love fritters too! For me its a great and yummy breakfast!!!
