As weird as it may sound, I don’t like the banana-dark chocolate combo. On the other hand, there’s something about bananas, white chocolate and nuts that I simply adore!

That being said, I have a tendency to going back to a few old recipes and my banana blondies recipe is one of those. So I bought some bananas and headed home with those blondies in mind. But then, when I opened my Evernote notebook, I found this Smitten Kitchen recipe and decided to give it a try. And, boy, was it worth it! 🙂

FRANGELICO AND BANANA BLONDIES
(adapted from Smitten Kitchen)

INGREDIENTS
113g  (8 tablespoons or 1 stick) butter, melted
220g (1 cup) dark brown sugar
1 large egg
2 bananas, mashed
Pinch of salt
135g (1 cup + 1tbsp) flour
60ml (1/4 cup) Frangelico or any other nutty liqueur
70g (1/2 cup) white chocolate buttons/chips

METHOD
Butter and line a 20x20cm (8×8in) tin with parchment or foil.
Mix melted butter with brown sugar – beat until smooth. Beat in egg and then bananas and liqueur.
Add salt, stir in flour. Mix in chocolate buttons.
Pour into prepared tin and bake at 180*C (350°F) for 20-25 minutes, or until set in the middle. Cool on a rack before cutting them.
