Banana ring

My mum has been making this pudding since I was a child and it’s truly delicious. And with a few tweaks it became even healthier 😉

Its appearance is kind of rustic and this recipe makes a small pudding but it is so easy to prepare that I bet you’ll keep making it over and over just like me 🙂


6 bananas
2 eggs
4 tbsp muscovado sugar
2 tbsp GF flour
40g margarine, room temperature

Preheat oven to 180oC and grease a cake ring.
Mash the bananas, add the other ingredients and beat well.
Pour batter into prepared tin and bake for about 1 hour or until golden brown.
Serve with cinnamon sugar or butterscotch.

NOTE: You can totally use caster sugar, butter and plain flour instead, like my mother does.

  3. I love how you’ve made this GF and healthier. With my illness I’ve been contemplating trying a GF diet, but with all the goodies I make, I just haven’t got around to it yet. That, and the fact that some recipes require so much adapting and the gum too. But this one looks simple and delicious.

    It doesn’t look small to me or maybe it’s the plate that makes it look bigger? I’ve never tried banana pudding before. Must add to the ever growing list. 🙂

Erika, this sounds like one of those old fashioned recipes that are deceptively simple, but full of flavour, and remind you of having afternoon tea with grandma. 🙂 I can see it becoming a recipe that I use again and again when we have unexpected guests, or when you just need a homely dessert. I’m so intrigued by it…. and I have bananas that are in need of baking this weekend. I’m definitely trying this, because it looks and sounds so delicious! Between you and a few other bloggers, I’d like to thank you for the poundage that my hips will be acquiring this weekend!

    I do have a question…I’m wondering what size tin I should use for this? I don’t have a cute ring like that, but I do have a bundt pan…and I’m thinking that might be too big..Could I just put it in an 8 x 8 square pan?

    • LoL Prudy! Thanks for your sweet words! Over ripe bananas are the best for this. This cake ring is 23cm (9in) but I’ve made it in smaller rings too. I think you could bake it in your 8×8 but you’ll probably have to adjust the baking time. Do you have an angel cake tin?

    • Thank you! Now how can I describe the texture? Dense, moist, fresh… It’s like baked mashed bananas. And despite the small quantity of sugar, if the bananas are over ripe, it’s surprisingly sweet 🙂 Did that help?
