Peanut butter cupcakes

I had an appointment with my dermatologist the other day. We’ve been friends since we were at school and I know she doesn’t have much time so I decided to bring her a little something – and of course I’m talking food 🙂

I made these peanut butter cupcakes from Making Cupcakes with Lola. Yes, I know: yet another! But they all look so irresistible that I want to bake – and eat! – them all 😛 To top these I used semi sweet chocolate ganache and decorated with finely chopped peanuts. That’s the only thing I changed from the original recipe because – you already know by now – I’m not a huge fan of buttercream.

PEANUT BUTTER CUPCAKES

INGREDIENTS
200g flour
1½ tsp baking powder
175g unsalted butter, room temperature
200g muscovado sugar
200g peanut butter
2 large eggs
150ml milk

METHOD
Preheat oven to 180°C. Line a 12-cup muffin tin with paper cups.
Cream butter and sugar until pale and fluffy. Add peanut butter and beat. Add eggs one at a time, mixing well after each addition.
Alternately add flour and milk, leaving baking powder to mix in with the last portion of flour.
Pour batter into the prepared cups, filling up to ⅔, and bake for 20-25 minutes.

FILLING, TOP AND DECORATION
1 quantity semi sweet chocolate ganache
100g ground peanuts
Core cupcakes after cooled and fill with ganache. Place lids back on and spread a little ganache on top.
Put ground peanuts on a small plate and roll the edge of the cupcakes on it.
