Baked cheesy courgette fritters

I love fritters.

There, I said it. I love everything fried (except for onions).

But I hate frying :\

So I decided to make a batch and try to bake them. I have to admit now that I still prefer them fried but when I think of standing next to a hot hob holding a pan full of hot oil for, what?, 15-20 minutes and all the calories that come with it, I’m well contented with this baked version 🙂

BAKED CHEESY COURGETTE FRITTERS

INGREDIENTS
250g grated courgettes
2 eggs, beaten
170g potato flour or plain flour
1/2 tbsp baking powder
100g grated parmesan cheese
salt, pepper and seasoning to taste

METHOD
Preheat oven to 220°C. Mix all the ingredients together, make ping pong sized balls and arrange them on a baking tray. Bake for 12 minutes or until golden brown.

Yields about 20.

  2. I love your recipes. They are simple and easy…I would like to try this one. Should I fry or bake them? do they taste very different (baked/fried?)

    • Thank you so much indeed, Liz! Well, you can do either but for me fried beats baked any day 😉 But to eat fritters more regularly it’s best to bake them 🙂
