I’ve pinned these cute bunnies last Easter but I didn’t have the time to make them then. I’m no good at planning! This year though I got around to it 🙂
This week is Potluck Week at I Heart Cooking Clubs and I was dying to make a carrot cake. So I found this Tessa Kiros’s recipe that Maria, of The Goddess’s Kitchen, said was THE best and decided to give it a go.
The cupcakes turned out flavourful and spongy and not too sweet – which was ideal because I was going to frost them with meringue 🙂
I’m taking them over to Fiesta Friday so we can celebrate Easter together!
CARROT CUPCAKES
(adapted from Tessa Kiros’s via The Goddess’s Kitchen)
INGREDIENTS
4 eggs
250g caster sugar
185ml sunflower oil
300g plain flour
3/4 tsp salt
2 tsp baking powder
1 teaspoon bicarbonate of soda
2 tsp ground cinnamon
400g carrots, peeled and grated
55g chopped hazelnuts
55g sultanas
METHOD
Preheat oven to 180°C/350°F/Gas4. Line 2 muffin tins with paper cups.
Whisk eggs and sugar until creamy, then whisk in the oil. Sift together flour, salt, baking powder, bicarbonate of soda and cinnamon. Add this to the eggs and whisk. Add the carrots, sultanas and nuts.
Scoop batter into the paper cups and bake for 22 minutes or until a screw inserted in the centre comes out clean.
FROSTING
{I used Swiss meringue and dyed it green because I wanted a grass effect (Wilton’s 234)}
180g butter, softened
250g icing sugar
180g cream cheese
3 drops vanilla extract
Walnut halves to decorate (optional)
METHOD
Whip butter and icing sugar together until it is stiff. Beat in the cream cheese and vanilla. Spread over the cake and decorate with walnut halves.
NOTE: I made 16 cupcakes and a small loaf.
What an innovative idea! they look very pretty!

This is funny, it took me a moment to figure out that it was the bunny’s tail and feet that were popping out, but then I got it paired with your title. These are so adorable, Erika.
