Starbucks inspired cheese muffins

I stumbled upon this recipe a while ago and it sounded so good that I decided to make it. Well, it delivers what it promises! This copycat is close enough to the real thing for me: moist, cheesy… hmmmmm!

It’s also a perfect snack to munch on whilst you wait for Christmas dinner 😉

CHEESE MUFFINS

INGREDIENTS
250g flour
1 tbsp sugar
10g dried active yeast
black pepper, thyme and oregano to taste
200g grated cheese
250ml lukewarm milk
1 egg
100g unsalted butter, melted

METHOD
Preheat oven to 200°C. Lightly grease 18 muffins cups or line them with paper cups.
In a jug, combine yeast and milk and set aside.
In a bowl, combine all the dry ingredients.
Add egg and butter to the yeast mixture and then add it to the dry ingredients mixture. Beat until you have a creamy batter.
Pour batter into prepared cups sprinkle with a little grated cheese and oregano and allow it to rest for 1 hour.
Bake for 25-30 minutes.

NOTE: Instead of pepper and thyme, I used a Tandoori Rub I bought from Nomu and it gave the muffins a special kick.
