I’ve been making these biscuits since I was 10. They’re really easy, the only problem – if that’s a problem at all! – is that it yields a huge amount of biscuits. You’d better summon some help because scaling down requires advanced Maths knowledge – 3 eggs, see? So call in a friend for a pleasant afternoon 😉 It’s totally worth it!
COCONUT KISSES
(yields about 300 small biscuits)
INGREDIENTS
1kg cornflour
50g desiccated coconut
100ml coconut milk
3 eggs
300g unsalted butter, room temperature
400g caster sugar
METHOD
In a small bowl combine desiccated coconut and coconut milk and set it aside for a few minutes.
Combine all the ingredients in a large bowl and work with your hands to form a ball. Take small portions and roll into balls. Bake at 180°C for about 10-15 minutes.
NOTES: I’ve baked 3 batches of 54 each and frozen the other half of the dough.
To make it more festive, I brushed the tops with a little gold pearl dust.
These look so sweet and coconutty- I bet they just melt in the mouth!

300 biscuits, wow! I should make these next time I’m involved in a bake sale fundraiser. The recipe seems simple enough for my kids to do/help. They are actually perfect for this time of year, they look like snow balls! 🙂

I made these last night, they are lovely!
I did find it hard to make the ball though. Is it ok to cream the butter and sugar before adding the rest of the ingredients (like I would do if I was making a sponge)?

Great! Thanks for the feedback! I don’t know if it would make any difference creaming the butter with the sugar. Maybe you could add a little more coconut milk. It happens with me sometimes too – I think it’s probably the weather. Merry Christmas!
