Do you ever feel that urge to eat something sweet in the middle of the afternoon? I do! But it’s not always chocolate – that I have tons lying around 🙂 So I looked at the fruit bowl and the bananas stared back at me and I thought I would like something warm and comforting… Banana crumble it is!

yields 2 ramekins
70 g flour
pinch of salt
1 ½ tablespoons sugar
1 ½ tablespoons demerara sugar
pinch of ground cinnamon, or to taste
30 g flaked almonds
50 g unsalted butter, cold and chopped
Preheat the oven to 180°C. Slice bananas and divide them equally between two lightly buttered ramekins (or any other ovenproof bowl of 1 cup (240 ml) capacity). Set aside.
Place flour, salt, sugars, cinnamon and almonds in a medium bowl and mix to combine. Add the butter and, using your fingertips, rub the ingredients together until mixture resembles breadcrumbs. Sprinkle over the bananas and bake for 30 minutes or until golden.
NOTE: Careful not to burn your tongue! 😛
