I bought some bananas a couple of days ago and today I still had 3. So I decided to use them up before they had to go to waste.

I found a recipe for an apple cake but it had far too many steps – not my thing, you know! I tweaked it a lot and ended up merging the first two steps and eliminating the third 🙂

BANANA MUFFINS

INGREDIENTS
395g sweetened condensed milk
150g butter
3 eggs
3 tbsp sugar
250ml full fat milk
300g flour
130g cornflour
1 tbsp baking powder
1 tsp ground cinnamon
3 bananas, halved and sliced
melted butter
cinnamon sugar

METHOD
Preheat oven to 200°C and prepare a muffin tin with paper cups.
In the mixer bowl beat butter, sugar, condensed milk and eggs together. Add cornflour and cinnamon and beat. Alternate milk and flour, only whisking to incorporate. Add baking powder and incorporate.
Scoop the batter into the cups, filling only up to the middle, and place 3-4 pieces of banana on top. Bake for about 20 minutes.
Wait five minutes so that you can handle them, brush the tops with a little melted butter and sprinkle with cinnamon sugar.

NOTES: Makes 24 muffins.
I could not taste the condensed milk after baking 😦 but it turned out really good anyway.

  2. They look amazingly moist and yumsome. I’m so scared of trying muffins and cupcakes, but when you make it sound so simple, I think it’s worth a try!
